In this recipe, these vegetables are sauteed with toasted sesame oil and a little bit of olive oil and with caramelized ginger.
Shiitake mushrooms contain beta-glucan which is effective for boosting immunity to stave off infection and disease. They also contain iron, an important nutrient which is hard to find in most vegetables.
This side dish provides a powerhouse of of nutrition when cooked down, and concentrates the minerals and the vitamins found in these anti-inflammatory, flavorful vegetables.
