Recipe: The Health Benefits of Bok Choy

Nutritionist Jennifer Whitney, CHN shows Dr. Michael Karlfeldt how to prepare bok choy, a staple vegetable used in Asian cooking. Combined with Shiitake mushrooms, ginger and carrots are a delicious, nutritious side-dish that can be prepared to go alongside any meal such as chicken and quinoa.

Bok choy is from the cabbage family. Bok choy is a vegetable people in the Western world, especially the U.S., may be less familiar with preparing and knowing how to incorporate into the diet. In this recipe, these vegetables are sauteed with toasted sesame oil and a little bit of olive oil and with caramelized ginger. 

Shiitake mushrooms contain beta-glucan which is effective for boosting immunity to stave off infection and disease. They also contain iron, an important nutrient which is hard to find in most vegetables. 

This side dish provides a powerhouse of of nutrition when cooked down, and concentrates the minerals and the vitamins found in these anti-inflammatory, flavorful vegetables. These vegetables have been recommended and used for thousands of years for cancer prevention and immune support by practitioners and other health experts.
